Cooking Instructions

Wash meat and dry over medium heat start cooking the meat with 2 tablespoon olive oil for 10 minutes then add bay leaves cumin seed peppercorns coriander seed with the hot water and cook for 45 minutes covered

In separate pan chopped the onions cook over medium heat with 1 tablespoon oil olive for few minutes then add the mushrooms chopped and cook then add the pepper paste with the spices(curry pepper turmeric)I mentioned on top cook for 10 minutes add the 2 cans of tomatoes and cook for another 10 minutes

Then add the onion mushrooms mixture to the meat after 45 minutes of cooking the meat and cook for another half hour over medium heat serve over saje bread

This recipe was modified from serious eats. I use coarsely ground chuck instead of short ribs as it's less work and you dont have to pick through bones and chop hot meat. You can substitute 1/2 cup chile powder for the whole chiles, but you'll lose complexity. Quality dried chiles will be pliable and bend. You can also use 3 15oz cans of beans instead of dried, but they wont have as good of texture. Finally, if you have the time/space, you can add the beans directly to the chili base with 2 cups additional water and cook them in the sauce 2-4 hours in an oven at 225 F for wonderfully flavorful beans.
