Steps

Add flour to a bowl and season with salt and pepper. Mix well.

Coat the ray wings in the seasoned flour.

Heat a frying pan or wok over medium/high heat and add the olive oil.

Add the wings once olive oil is heated and cook on each side for 6-8 minutes or until both sides are crispy. Turn the wings gently and occasionally to crisp both sides. Remove from heat and serve.

I had it with just a bit of sprinkled salt and pepper but its great with a garlic, parsley or coriander and butter sauce.
