Steps
- 1
Place a sieve lined with a sheet of strong kitchen roll over a cereal bowl.
- 2
Pour the contents of a pot of plain yogurt into the lined sieve and fold the corners of the kitchen roll into the centre to cover.
- 3
Place another small bowl on top of the yogurt and place a can of peas, or similar, in this bowl to add weight.
- 4
Place in the fridge overnight and allow the excess liquid to drain into the bottom of the outer bowl. Drain the liquid if necessary and return the bowls to the fridge.
- 5
When there is no more liquid draining out, overnight or about 8 hours should suffice, remove the kitchen roll and you will have cream cheese.
- 6
Put the cream cheese in a bowl and mix in a small amount of salt. This helps to firm up the cheese. The yogurt taste will be present initially and will fade after a short time. Flavour to taste if required.
