I had a lot of leftover rice from last night and wanted to make fried rice but with a twist. I checked the fridge and found some leftover Medan anchovies. So, I decided to make Medan anchovy fried rice just for fun 😂

I had a lot of leftover rice from last night and wanted to make fried rice but with a twist. I checked the fridge and found some leftover Medan anchovies. So, I decided to make Medan anchovy fried rice just for fun 😂

Finely chop the shallots, garlic, onion, red chilies, and green onions. It's better if the onions are finely chopped.

Heat oil in a pan and fry the Medan anchovies. Fry briefly, then remove and drain.

Add the shallots, garlic, and onion to the pan (you can use the same pan used for frying the anchovies), then add the chilies. Sauté briefly until fragrant, then add the egg. Let the egg cook until it's half-cooked, then scramble it.

Add the rice and stir briefly. Once the spices are evenly mixed with the rice, add the fried Medan anchovies. After that, you can add a little oyster sauce and seasoning, then mix well. No need to add salt as the saltiness from the Medan anchovies and oyster sauce is enough.

Once the spices are evenly mixed, taste and adjust the seasoning. If it's just right, sprinkle with green onions (you can also add fried onions). Finally, the Medan anchovy fried rice is ready to be enjoyed.
