I had some red potatoes that were a little on the small side. I was going to make “Cottage Fries” and decided against it. I thought, “Why don’t I just smash these damned things and fry them whole”? It worked out great, nice and crispy. Karl -

This is my summer variation of a German potato dish.Step 1 If your microwave doesn't have a "Tubers" setting, please add some water when cooking the potatoes.Step 3 Place the zucchini on top of the potatoes. When the potatoes are done, toss everything together. This turned out to be pretty awesome. I used small red potatoes this time, but any small potato should work. I just prefer red for this. They were crispy on the outside, and creamy on the inside. Slightly sweet, slightly acid, just a hint of salt. It is a long cook, but so worth it. You really need to try this one. Fo Fa -
