Bihari Dal Pitha is a popular traditional rice flour dumplings in Bihari Cuisine. There are different varieties of Pithas. Bihari Dal Pitha is prepared using fresh rice flour and spicy lentil filling. It is a very healthy, steamed, protein riched, a steamed and vegan snack that you can serve anytime as a snack. Just you need a cup of tea or any favourite chutney with this pitha. I made them using store-bought rice flour, but traditionally they are made with freshly grounded rice flour.

Steps
- 1
Clean and soak chana daal for atleast 2 hour.
- 2
After 2-hour pressure cooks the dal with little water for 1 whistle only. The daal should cook half done. You can avoid this step and directly follow the next step. But if you cook daal before grinding, the frying process will be easy and quick.
- 3
Chop garlic, ginger and green chillies roughly.
- 4
In a mincer place, the half-cooked and drained daal along with chopped ginger-garlic, chillies, cumin seeds, whole black peppers, ajwain and salt.
- 5
Mince to make a coarse paste.
- 6
Place a non-stick pan to the stovetop with 1 tablespoon of cooking oil and add in the lentil/daal mixture to the pan. Stir well.
- 7
Keep stirring till the dal cooks well and they get a crumbly texture. It will take about 5 minutes.
- 8
Add in a handful of chopped coriander leaves, give a last stir and remove from heat.
- 9
For the rice pitha take 1/2 cup of rice flour with 1+1/4th cup of water to make a thin batter. If you are using rice, then grind the soaked rice with 1+1/4th cup of water.
- 10
Add in a pinch of salt and 1 teaspoon of cooking oil. Cook in medium heat by stirring constantly to make a soft batter. It will take about 5 minutes to make the dough.
- 11
Remove from heat and let it cool for a while.
- 12
When the dough cools enough to touch, grease your hand with little oil and take lemon size portion of the dough and roll with your palm to make a ball.
- 13
With your fingers press the ball to make a patty with a cavity. Look at the picture to see the shape.
- 14
Stuff the cavity with 1 teaspoon of the lentil mixture and seal the pitha by pressing the edges.
- 15
With a fork make some impression just to give a design. You can also pinch the sides to make some design.
- 16
Grease a steamer vessel and place the pitha to the vessel.
- 17
Make all the pithas following the same procedure and place them to the steamer vessel.
- 18
Steam the pithas in the steamer for about 8 to10 minutes.
- 19
After 8 to 10 minutes your pithas will be ready.
- 20
Transfer to serving dish.Garnish with some chopped coriander leaves.
- 21
Serve with tea or any kind of chutneys.
