Drumstick leaves egg bhurji

Clean and wash the drumstick leaves
For preparing the egg mixture, Beat the eggs with red chilli powder and little salt

In a pan heat the oil and crackle the cumin.
Then add the drumstick leaves and cook well.

Once it is cooked add turmeric powder, hing, salt and saute the same.
Add the coconut masala to the cooked drumstick leaves.

Saute for some more time till the raw smell goes.
Add the beaten eggs to the cooked drumstick leaves mixture.

Mix the egg mixture finely with the drumstick leaves mixture.
Cook for about 3-4 minutes on sim flame or until eggs are done.

Serve with hot rice or chapathi.
