Ingredients

  1. 8x Skinless Chicken Thighs
  2. 4x Tablespoons smooth peanut butter
  3. 2x Onions
  4. 2x Peppers
  5. 4x Garlic Cloves
  6. 1x lemongrass tablespoon
  7. 1x ginger tablespoon
  8. 2x Honey tablespoon
  9. 1x Chilli
  10. 1x lime juice tablespoon
  11. 1x Curry powder tablespoon
  12. 1x soy sauce tablespoon
  13. 1x Chicken stock pot
  14. 1x sesame oil
  15. Halfpint of water

Steps

  1. 1

    Heat up pan with the oil. Season chicken and coat with a sprinkle of curry powder. Add to pan and fry until a nice colour. Remove from pan.

  2. 2

    Add chopped onions, peppers, garlic, lemongrass, ginger and chilli to the pan and sweat on a low heat for about 5 mins. Add the chicken back to the pan.

  3. 3

    Add the rest of the ingredients and bring up to boil. Then reduce to a low simmer.

  4. 4

    Simmer gentle for anything from 30 mins upto 2 hours. Add more water if required but you want a curry like consistency. Remove then serve.
