Finely chop the garlic. Also chop the tomatoes, onion, and green chiles into larger pieces.

Heat the oil. Sauté the onion for about 2 minutes, then add the garlic and tomatoes. Once the tomatoes release their juice, add the chiles and potatoes, and season with a little salt, as the machaca already contains salt.

Once the potatoes are slightly sautéed, add the beef and water. Cover and let cook on low heat for about 8 minutes. Then uncover and let the water reduce a bit to make the burritos.

Heat the flour tortillas and make the burritos. Alternatively, serve with beans and salsa.
