A healthy, nutritious lauki or bottle gourd raita made using #yakult light. Pair this with your favourite stuffed paranthas, rice (khichadi or pulao).
Cooking Instructions

Peel, wash and grate the lauki/ bottle gourd.

In a sauce pan add 1 cup of water and put the grated bottle gourd in it along with 1/4 tsp salt and boil for 5 mins. Shut down the flame and cover and let it sit in the pan for another 5 mins. Strain the water and let it get to room temperature.

In a bowl, take the yogurt and whisk it till it is smooth and lump free. Add the boiled lauki and season with salt, black pepper, jeera powder.

Prepare a tempering by heating ghee in a pan, add jeera seeds and allow it to crackle. Add hing and red chilli powder, cook for 15-20 secs and pour this tempering into the yogurt. Mix well and put it in the fridge till you need to serve.

Just before serving, add yakult into the yogurt, mix well and garnish with some black pepper, red chilli powder, jeera powder and coriander leaves.
