One of these is lauki (bottle gourd), which is currently abundant in the market. Lauki is beneficial for weight loss and heart health. It makes a delicious vegetable dish with minimal spices and oil. Besides the classic vegetable dish, lauki is also used in savory and sweet recipes like kofta, cheela, bajka, thepla, halwa, kheer, and barfi. Today, I'm sharing a recipe for lauki raita with mustard, a nutritious and flavorful dish. This recipe balances cooling ingredients like lauki and yogurt with the warmth of mustard. Combining them creates a well-balanced dish.

Ingredients

20 minutes.
Serves 5.
  1. 1/2medium bottle gourd (lauki)
  2. 1 cupplain yogurt (about 250 grams)
  3. 1 tablespoonground mustard seeds
  4. 1/2-1/2 teaspoonroasted cumin powder and red chili powder
  5. 1/2 teaspoonblack salt
  6. 2finely chopped green chilies and a little chopped cilantro
  7. Salt, to taste

Cooking Instructions

    Peel the bottle gourd and cut it into small pieces. Place in a pressure cooker with 1/2 cup water and salt. Cook for 1 whistle, then drain in a strainer and let cool.

    In a bowl, whisk the yogurt well. Add black salt and mix, then add the cooked bottle gourd and combine. Add the ground mustard seeds, red chili powder, and roasted cumin powder.

    Mix well, then add the green chilies and cilantro. Cover and let sit for 1 hour so the flavors blend. Serve chilled with your favorite meal.
