Cooking Instructions

Peel, wash, and grate the bottle gourd. In a bowl, heat water and add the grated bottle gourd. Boil until tender, then drain using a strainer and discard the water. In a separate bowl, whisk the yogurt until smooth, then add a little milk to thin it out. Mix the cooked bottle gourd into the yogurt. Add all the spices to taste and refrigerate to chill.

Add salt, black salt, roasted cumin powder, black pepper powder, and chopped cilantro to the raita.

Your lauki raita is ready. Serve chilled. It's not only delicious but also healthy.
