Winter is a time when we get good and red tomatoes and fresh smelling coriander. So just made this different daltarka.
Steps

First boil the dal, smash and keep it aside. Now in a pan add oil, when it's hot add some methi seeds and a pinch of hing. Then add the chopped onion saute it.

Now add chopped garlic, ginger and green chillies. Mix them. Now add the chopped tomatoes. Little sugar and let the tomatoes soften. Cover and cook for 2-3 min. Now add turmeric, red chilli powder, coriander powder, jeera powder and little sugar.

Now let the masala cook then add coriander leaves and let oil comes out of the masala.

Now add the dal, coriander leaves and Kashmiri red chilli powder and mix them all.

Add water and let it cook for 5-10 min in low flame. Add salt to taste. When done add garam masala.

For the tarka in a pan add butter, when hot add whole red chilli, bay leaf and whole jeera. When the jeera is fried, put it on the dal. Garnish it with coriander.
