Ingredients

4 servings
  • 2-3good sized potatoes
  • 2large tin of tuna, I used tuna in olive oil, drained
  • 2-3 tablespoonsParmesan
  • 1egg
  • Throw in any herbs if you want
  • 2-3 tablespoonsfine breadcrumbs
  • to tastesalt
  • Olive oil

Steps

  1. 1

    Peel, chop, boil and mash your potatoes in lightly salted water. Mash then leave to cool in a bowl. When cooled, add Parmesan and the egg. Mix well

    Add the drained tuna, mix well. Add breadcrumbs and mix until you get a homogeneous mixture.

    Put the mixture on cling film. Shape into a sausage. Roll up and leave it in the fridge for about an hour if possible

    Preheat oven to 180. Line a baking tray with baking paper. Drizzle with olive oil. Sprinkle with breadcrumbs. Add loaf on top. Sprinkle loaf with breadcrumbs and then drizzle or spray with olive oil. Bake for about 35-40 mins, rest for 5 minutes then serve 😀
