Ingredients

4 servings
  1. FILLING:
  2. 1 teaspoonolive oil
  3. 1/2 teaspoonminced garlic
  4. 4 cupstrimmed packed spinach
  5. 15 ounceslow-fat ricotta
  6. 1/2 cupshredded provolone cheese
  7. 1/4 cupshredded carrots
  8. 1/4 teaspoonsalt and 1/8 teaspoon pepper
  9. OR 1/2 teaspoon Mrs. Dash or Adobo Seasoning
  10. dough
  11. 1 poundprepared pizza dough, warmed to room temperature
  12. 425PREHEAT OVEN to
  13. bake 18-20 minutes

Cooking Instructions

    Heat oil in large skillet over medium-high heat. Add garlic and cook 30 seconds.

    Add spinach and cook and still til all spinach liquid is evaporated. ABOUT 3 minutes.

    Cool and combine rest of filling ingredients in large bowl. Stir in spinach mixtures. Makes 3 cups.

    Divide dough into quarters. Roll each to 8-inch circle and 3/4 cup filling (about 1/4 of filling) on half of each circle, leaving a 1" border on the filling side.

    Moisten border, fold and press & seal with fork.

    Put on ungreased cookie sheet and bake 18-20 minutes until tops are golden
