Sausage Pepper & Broccoli Rabe Calzone with Roasted Peppers & Mozzarella

I made 2 large to serve my family, but servings can be cut in half to make 1 large.
This is a delicious cross between a sausage/pepper and a tasty stromboli all wrapped into one. And, to make it easy on yourself; you can use store bought or dough bought from a local pizzaria!

This is a delicious cross between a sausage/pepper and a tasty stromboli all wrapped into one. And, to make it easy on yourself; you can use store bought or dough bought from a local pizzaria!
Cooking Instructions

Before you prep your sausage and other ingredients, place your dough on the kitchen counter for at least an hour and let it rest at room temperature.

Start by either baking your sausage in the oven, grilling or pan roasting. I usually bake since I will be using the oven anyway for the stromboli. You will need about 35 minutes for the sausage to cook.

While the sausage is cooking, in a saute pan place 1/3 cup of EVOO and heat your oil, make sure your Broccoli Rabe is clean and patted dry, once your oil is heated add chopped garlic, I add 2-3 cloves chopped, if you are not a garlic lover, leave the garlic whole and pick them out later. Add, a dash of red hot chili flakes (optional) then add your Broccoli Rabe, be sure to stir consistently to avoid burning the garlic. You are looking to wilt the Rabe down. If you need to, add a lid.

Once all your ingredients are cooked and somewhat room temperature. Start to work your dough by rolling it into a rectangle, be sure to flour your workspace and your rolling pin. When you have the size you want, begin layering your stromboli. Shredded cheese on the bottom, sausage, peppers and Broccoli Rabe on top. Leave enough edging to seal up as you roll.

Once you've filled and rolled it up, the seal should be on the bottom. Apply a simple egg wash to the top and sides and vent it with a knife to allow steam to escape. Bake in the oven at 400° for about 35-40 minutes. Serve with a side of marinara and enjoy!
