Ingredients

  • 1cooked sweet potato mashed
  • 1egg
  • Rind of 1/2 orange
  • 1/4 tspcinnamon and ginger
  • 1/8 tspground cloves or a grating of nutmeg
  • 1/4 tspbicarbonate soda and cream of tartare
  • 2 tbspsground almonds or cassava flour

Steps

  1. 1

    Mash the sweet potato and mix with a beaten egg.

  2. 2

    Fold in all other ingredients.

  3. 3

    Cook on the hob at medium heat in avocado oil for 3 minutes each side, or until browned

Made this from leftover s.pot, s mashed with butter and pot.water. make sure you use straight s. Potatoes , turned out ok thou with additional flour. Great with U.Peninsula maple syrup
