Ingredients

2 servings
  • 40porridge oats
  • 200 ggreek yoghurt
  • 250 mllight coconut milk
  • 2 tbsphoney
  • 4 tbspdesiccated coconut
  • 1tinned pineapple in juice (130g) drained weight
  • 1lime juice plus zest for decoration
  • 30 gshelled pistachio nuts (could do with different nuts)

Steps

  1. 1

    Mix greek yoghurt, coconut milk, lime juice and honey. Then add oats and stir. Add 2/3 chopped pineapple

  2. 2

    Pour mixture into 2 bowls

  3. 3

    Top it up with desiccated coconut, rest of pineapple chunks and crushed pistachio nuts
