Place the ground beef in a bowl. Add the onion pulp after squeezing out its juice (set the juice aside). Add the tomato paste and knead the meat until well combined and dough-like. Make sure to use finely ground beef.

Add the baking powder, breadcrumbs, egg white, and spices. Mix everything together very well.

Shape the meat mixture onto skewers and arrange them on a buttered baking sheet. Place in the freezer for 15 minutes while you preheat the oven to 350°F (180°C).

Before baking, brush the kofta with the reserved onion juice, tomato paste, and oil mixture. Bake in the oven, turning to cook both sides, about 12 minutes per side until cooked through.

Heat the charcoal. Once the kofta is out of the oven, place the hot charcoal in the baking sheet, add a couple of drops of oil on it, and cover immediately for 5 minutes to infuse the smoky flavor. Enjoy!
