‘Okonomiyaki’ is commonly made with Cabbage. I often make it with Kale. Broccoli version is also very yummy. Especially Broccoli stems are perfect for this ‘Okonomiyaki’. When Broccoli are in season and they are tasty and cheap, why don’t you try it? I like Prawns for Broccoli version, but you can use Squid, Pork, Ham, or whatever ingredients you like.

Ingredients

2 servings
  • 1/2 headBroccoli *finely chopped or shredded
  • *Note: Broccoli stems are the best. Add as much as you can mix with the batter
  • 100 gPrawns *OR other protein, cut into small pieces if large
  • 1-2Spring Onions *finely chopped
  • 1 cupPlain Flour OR Self-Raising Flour
  • 1 cupWater
  • 2Eggs
  • 1 pinchSalt
  • 1/4 teaspoonDashi Power *optional
  • Oil for cooking
  • Okonomiyaki Sauce
  • Japanese Mayonnaise
  • Aonori, Katsuobushi (Bonito Flakes), Benishoga (Pickled Ginger) *optional

Steps

  1. 1

    Make the batter by mixing the Flour, Water, Eggs, Salt and Dashi Powder.

  2. 2

    Add finely chopped or shredded Broccoli, Prawn pieces and Spring Onion to the batter and mix it well.

  3. 3

    Oil a barbecue hotplate or a frying pan, pour the mixture to form pancakes. When the edge of the pancake has set, flip the pancakes over, and cook for 2 or 3 minutes until all the batter is cooked. You may turn the pancakes over a few times while cooking.

  4. 4

    Place the pancake on a plate, and dress with Okonomiyaki Sauce and Japanese Mayonnaise. Sprinkle with Aonori or other toppings if you like. *Today I sprinkled with chopped Parsley.
