Try this simple rasedar aloo sabji with minimal ingredients yet full of taste.

Heat oil in a wok.

Add cumin seeds and asafetida and let the seeds crackle.

Add peeled and cubed potatoes and saute them for a minute.

Puree the tomato and add it to the potatoes.

Add salt and other dry spices and mix well.
- 6
Add desired amount of water for the gravy and let it come to boil.

Let the gravy simmer on low for 5 minutes or so and add coriander leaves and switch off the gas.

Serve hot with roti or pooris.
