Heat the olive oil in a 12-in. Skillet over medium heat until simmering. Add the garam masala, coriander, paprika, cayenne pepper, and salt. Stir occasionally until the onion is softened (about 10 min.) Add the tomato paste, stir, and cook for 1 min.

Add the cauliflower and carrots; stir well to coat with spices. Add the crushed tomatoes and broth; stir to combine. Bring to a boil. Reduce the heat to low, cover, and simmer until the vegetables are just tender (about 20-25 min.)

Stir in the peas and cream; simmer uncovered. Stir occasionally until thickened (about 10-15 min.)
