In a kadai, add 2 tbsps ghee, fry cashews and raisins. Remove from the ghee when cashews turn golden brown and raisins plump up. In the same kadai, add 2 tbsps ghee and roast the vermicelli to golden brown. In another vessel boil 1/2 cup water, add jaggery to it and boil till u get a syrup.Strain it and keep aside. Boil 4 cups of water and add the roasted vermicelli to it.

Once the vermicelli becomes soft and tender and water almost evaporates add the jaggery syrup and keep stirring till the mixture becomes thick. Add colour powder and cardamom powder and mix. Add the cashews and raisins on the top and serve. Vermicelli kesari ready to serve!!!😀😋
