Basque Burnt Cheesecake

Cooking Instructions

Preheat Oven to 200°C and place rack in the middle
- 2
Butter 7"round pan and line fully with parchment paper, about 2" going over the top of the pan

Beat cream cheese and sugar in stand mixer with paddle attachment on medium-low speed, until smooth and no visible lumps
- 4
Increase speed to medium and add eggs, 1 each after beating every 15 seconds
- 5
Reduce speed to medium-low, then add cream, salt and vanilla extract
- 6
Turn off mixer and sift in flour evenly over cream cheese mixture, then beat on low speed until very smooth and homogenous

Pour batter in prepared pans and bake for 45-50 minutes, until deeply golden brown and jiggly on the center

Let cool slightly (it will fall drastically) then remove from pan. Let cool completely before carefully peeling off parchment paper. Serve in room temperature.
