Once the water is boiling, add the potatoes, cut into quarters.

In a pot, boil the water with the chopped green onions, annatto, and salt to taste.

Meanwhile, prepare the patacones (fried green plantain slices) as usual.

Once the patacones are ready, add the milk to the soup, then add the patacones.

Finally, add the cheese and butter. Let the soup boil for about 3 more minutes. Then add the fresh herbs.

To thicken the soup, mash it a bit with a potato masher or similar tool.
