Street food form the by lanes of Mumbai, this humble snack is not only tasty but healthy and filling as well. Packed with proteins from the eggs, vitamins and minerals from the vegetables it is a great sauce of nutrition and energy any time of the day.
Anda bhurji is indian style scrambled eggs with lots of vegetables and spices. On the streets it’s made with a lots and lot of butter and loads of green chilies; to make it scrumptious and yummy. However, at home we like to make everything healthier, so I would be using very less butter or oil and some chilies as I am not a very big fan of the heat. To make it a complete and a healthy breakfast just combine it with whole meal toast and a bowl of fruits.
Sometimes, the egg bhurji becomes dry and chewy and this happens because it is over cooked. To make a soft and fluffy bhurji just add a teaspoon of milk to it and don’t cook it all the way. Once you fell it is almost cooked just remove from heat. The residual heat would cook the rest of the eggs and keep them soft. Serve them immediately with butter roasted pav. And it goes without saying any Indian street food tastes heavenly with a hot cup of masala chai.

Ingredients

  • 4Eggs
  • 3 tbspGhee or butter
  • 1large Onion, finely chopped
  • 2medium Tomato finely chopped
  • 1large, Capsicum/ green bell pepper, finely chopped without the seeds
  • 1Green chilies, finely chopped (add more as per your taste)
  • 5-6tbsp,Green coriander chopped
  • 1 1/4 tspsalt (or as per taste)
  • 1/2 tspRed chilli powder
  • 1 tspMilk
  • 4pavs
  • 2 tbspbutter to roast the pavs

Steps

  1. 1

    Heat ghee/ butter in a kadai/wok, add the onions and cook them till they turn light golden.

    Add the tomatoes and green chilies. Cook for 2-3 minutes.
    Add the salt, red chilli and half of the green coriander. Mix. Toss in the capsicum. Cover and cook till capsicum is a little soft.

    In the meanwhile break the eggs in a bowl add a teaspoon of milk and whisk lightly. Add the eggs to the vegetables and keep mixing till the eggs are almost done. Remove from heat add the rest of the green coriander.

    Cut the pav in half horizontally, heat some butter in a pan and roast the pavs in it till they are golden.
    Serve the buttery pav with anda bhurji and enjoy. dont forget to have a cup of chai with it :)
