Ingredients

  • 4-5Paneer cubes
  • 1 cupgobhi/cauliflower florets
  • 1carrot, chopped
  • 1 cupchopped beans
  • 1potato, large sized, chopped
  • 1 tspred chilli powder
  • 2chopped tomatoes
  • 1 tbspcoriander powder
  • 2-3chopped green chillies
  • as neededsalt
  • 1 tsppepper
  • 1-2 tsphaldi powder
  • 2-3 tspmustard oil
  • 1-2 tspgarlic-ginger paste
  • 1 tbspcumin seeds
  • 1/2 tspasafoetida (Hing)
  • 1bay leaf
  • as neededWater
  • 2chopped onions

Steps

  1. 1

    Heat oil in a kadhai on medium heat. Add mustard oil.

  2. 2

    Add cumin seeds, asafoetida, bay leaf then add chopped onions and bit of salt to it.

  3. 3

    After then add ginger-garlic paste and green chilies, stir. Now add tomatoes.

  4. 4

    Stir and let it cook for few minutes.

  5. 5

    Reduce heat. add turmeric, salt, pepper, red chilli, coriander powder and all the vegetables to it.

  6. 6

    Mix well and cook the veggies for minutes. Also, add 1/2 cup of water.

  7. 7

    Mix gently. add paneer cubes and cover the lid. Let it cook for a few minutes for 5-6 minutes.

  8. 8

    It's ready. Turn off the heat. Dry mix vegetable is ready. sServe hot with roti, curd, dhaniya chutney and salad.
