Heat oil in a kadhai on medium heat. Add mustard oil.

Add cumin seeds, asafoetida, bay leaf then add chopped onions and bit of salt to it.

After then add ginger-garlic paste and green chilies, stir. Now add tomatoes.

Stir and let it cook for few minutes.

Reduce heat. add turmeric, salt, pepper, red chilli, coriander powder and all the vegetables to it.

Mix well and cook the veggies for minutes. Also, add 1/2 cup of water.

Mix gently. add paneer cubes and cover the lid. Let it cook for a few minutes for 5-6 minutes.

It's ready. Turn off the heat. Dry mix vegetable is ready. sServe hot with roti, curd, dhaniya chutney and salad.
