Ingredients

2/3 people
  • 1carrot into thin matchsticks
  • 1courgette into thin matchsticks
  • 1red onion sliced
  • 1 headpak choi shredded
  • 1yellow pepper into matchsticks
  • 2garlic cloves minced
  • 1 tbspcurry leaves
  • 1 tspginger powder
  • 1 tspground coriander
  • 1 tbspapricot jam
  • 2 tbspsoy sauce
  • 1-2 tspchilli flakes depending on how hot you want it
  • 10prawns
  • 1large pork chop diced
  • 1lrg handful cashew nuts lightly toasted
  • little bit of fresh mint and coriander to serve

Steps

  1. 1

    Once you have all your veg chopped and ready, this is a really easy chuck it all in recipe.

  2. 2

    Heat oil in a pan and add your pork and all the spices, garlic and onion and cook for a few minutes.

  3. 3

    Add all your veg at the same time and cook for about 4 minutes.

  4. 4

    In a separate pan toast your cashews then remove, then in that pan fry off your prawns.

  5. 5

    Once all your veg has softened add the jam and soy sauce, cook for a further minutes then serve.

  6. 6

    Add the prawns, cashews and fesh herbs to the top of youtr pork veg mix and serve whilst piping hot.
