Ingredients

  • 2 CupsRice(Basmati)
  • 1/2 cupCauliflower
  • 1/2 cupcapsicum(diced)
  • 1/2 cupsweet corn
  • 1/2 cupcarrot (diced)
  • 1/2 cupbeans
  • 1/2 cuppeas
  • 1 cupOnion Paste
  • 1 tablespoonGinger garlic paste
  • 1 1/2 cuptomato paste
  • 1 tablespoongreen chilli paste
  • Whole Spices bay leaves,cloves, cardamom, cinnamon,black pepper
  • 2 tablespoonsEverest shahi biryani masala
  • 1 tablespoonRed chilli powder
  • 1 tablespoonturmeric powder
  • 1 tablespoonCoriander powder
  • 1 tablespoonGaram masala
  • 1/2 tablespoonblack pepper powder
  • 1 1/2 teaspoonsSalt
  • 2 tablespoonsDesi Ghee
  • 1large onion (sliced)
  • 1/2 teaspoonfood colour
  • Coriander leaves /pudina leaves for garnishing
  • You can use vegetables of your choice
  • For Raita
  • 2 cupscurd
  • 1/2 cupCucumber (diced)
  • 1/2 cupOnion (diced)
  • 1/2 cuptomato (diced)
  • 1/2 teaspoonred chilli powder
  • 1 teaspoonchaat masala
  • 1/2 teaspoonblack pepper powder
  • 1 teaspoonsalt
  • 1/2 cupwater

Steps

  1. 1

    First prepare the veggies...heat oil in kadhai...add whole Spices and then add ginger garlic paste and onion paste together...cook until onions start leaving oil..and it turns golden brown

  2. 2

    Add tomato puree and green chillies paste...and add salt and dry masalas together...cook it for 4-5 mins

  3. 3

    Then add all the veggies...and cook it covered for 5 mins on low flame...let it cook on medium flame until the veggies are soft...once it is done switch off the gas and keep it aside

  4. 4

    In a open vessel add rice and add 5 cups of water...add whole Spices-cardamom, cinnamon, bay leaves,cloves...and 1 teaspoon salt..cook the rice 90% don't over cook it...once rice is cooked strain the water and add desi ghee and keep aside

  5. 5

    In a microwave safe container which has lid...start making the layers...fir layer will be of rice...then second will be of veggies which u have prepared earlier..then third will be of rice...then fourth of veggies and last layer will be of rice...make 5 layers in total...cover it with lid and seal it with Dough...and microwave it for 3 minutes....

    In a pan heat 1 tablespoon oil add sliced onions and cook it till it is golden brown and crispy...take it out in a tissue

  7. 7

    Open the lid of biryani... garnish it with fried onions, coriander and add 1 tablespoon of food colour...and serve it hot

  8. 8

    For raita add all the ingredients...add water as per you like the consistency...then add dry masalas and salt...and add onions, tomatoes and cucumber...serve it with biryani

  9. 9

    Serve hot with raita🤤
