Miso Salmon and vegetable steam fry

Easy dish in which we can eat a lot of vegetables with salmon. You can add/change any other vegetables as you like. It is normally cooked in pieces of foil but I changed it to an eco-friendly way by not using foil - still tasty!

Easy dish in which we can eat a lot of vegetables with salmon. You can add/change any other vegetables as you like. It is normally cooked in pieces of foil but I changed it to an eco-friendly way by not using foil - still tasty!
Cooking Instructions

Cut vegetables into bite-sized pieces.

Make layers with the onion and half of the cabbage in a frying pan or a non-stick pan and rest the salmon on top. (I put some black pepper on the salmon this time but not necessary)

Mix Miso and Mirin and make paste. Then spread it on the salmon.

Cover salmon with the rest of the vegetables and sprinkle Sake all over then put butter on top.

Cover the pan with the lid and start heating with medium heat till it starts bubbling up a little. Reduce heat a bit and keep steaming for another 10mins. (Small medium-medium heat)

When vegetables became soft and sweaty then serve with its juice. Season to taste. Enjoy with some Japanese rice!

I didn’t put any mushrooms this time as I didn’t have them but I recommend this dish with some mushrooms! Please adjust the amount of seasoning depending on the amount of vegetables.

When I had some miso left over from making oden, I tried adding it to foil-wrapped salmon, and the result was surprisingly creamy and delicious. Since then it's become a firm family favorite!It's also delicious if you add some ground sesame seeds to the miso.You can use melting or non-melting type sliced cheese. The non-melting type has a stronger flavor, which I prefer. It will still melt though. You don't need to oil the foil or the frying pan.The mixed miso will be sweeter with white miso, but if you don't have it just use the miso you have on hand and adjust the sweetness with sugar.
