Heat oil in a deep cooking pan and saute ginger and garlic first. Followed by onion until translucent and add tomatoes next followed by the spices.

Mix well and cover. Cook until they are done and now add the veggies. Stir them all and saute for a minute or two on medium high heat.

Finally add in the oats, salt and 2-3 cups of water. Simmer on low heat for 5-6 minutes. Sprinkle garam masala and garnish with lots of coriander. Squeeze some lemon juice on it and drizzle a teaspoon of ghee just before serving.

Serve this piping hot for a delicious breakfast or brunch or even dinner.
