Polpette di orata e melanzana

Peel the veg, chop into cubes, make aubergine bigger than potatoes. Boil in lightly salted water for about 10 mins until cooked. Drain and leave to cool

Lightly cook the fish, either steam, pan fry or cheat like I did and microwave for about 2 minutes. Leave to cool. When cooled, add veg in a bowl

Flake the fish and add to the bowl, checking for bones. Add parsley, an egg and a tablespoon of breadcrumbs. Add a pinch of salt and mix well.

Prepare the other egg and more breadcrumbs. Divide mixture into 8 equal pieces, roll in the egg and then the breadcrumbs. If you want them extra crispy, do this again. Leave in the fridge for at least an hour. Then heat frying oil in a large pan. Deep fry for about 6-8 mins until golden brown. Serve with lemon, salad, bread or however you fancy!
