This clear soup is for lunch usually ate in indonesia and there are hundreds versions of soto from region to region of Indonesian arcipelago islands but I prepare the very simple one in my own version, you can add a few veges, protein meat /fried tofu/boiled egg and seafood of your personal choice. Ingredients

3 persons
  • 1Chicken breast (is thick), slice horizontally in halved
  • then cut into 2x2cm
  • Marinade for 15' in 1 tbs Mirin or Sweet Rice Wine
  • & 2 tbs Chinese Hoisin Sauce
  • 2 packetsRamen Egg Noodle
  • 2potatoes medium size, peeled cut into tiny cubes, steamed 17'
  • 1big white onion, finely chopped
  • 1 tspGarlic paste
  • 1 tspGinger paste
  • 1 tspLemon Grass /Sereh
  • 1/2 tspground Cardamom
  • Salt
  • grinded black pepper
  • 1/4 tspcayenne pepper powder (mild hot)
  • 1 stalkCelery diced
  • 1/2Carrot, peeled, grated
  • 1/4Cabbage chopped roughly
  • 1/2Red capsicum, sliced
  • 1 tbsThai Seasoning Soy Sauce
  • 2 cubesChicken bouillon stock
  • 2 1/2 cupsWater from the kettle for the soup
  • 1 tbsTomato Sauce
  • 1/2Lemon juice
  • 2 tbsRice Bran oil for stir-fry
  • 1 cuppre-fried whole salted Peanuts with the skin on
  • 1 handfulfresh Parsley as garnish
  • Regional Indonesian Hot Sambal or Thai Sriracha Hot Chilli Sauce

Steps

    Steam the potato cubed for 17' in a double pot. Cook,set aside.Toasted the Peanut with the skin on a dry pan for 2', remove and set aside. Marinade the chicken pieces for 15' with Hoisin Sauce & Mirin. In a wok put the 2 tbs oil & heat.Add the onions and stir-fry for 2' then add the marinade chicken, garlic paste, ginger paste, lemon grass and mix. Sprinkle with pinch of salt on chicken add grinded black pepper & continue to stir-fry for 2' until chicken are half cook. Don't overcook. Set aside

    Then add all the veges cabbage, red capsicum, carrot, celery and mix them and stir-fry for 2'. Quickly add water, Chicken bouillon/stock, ground Cardamom, cayenne pepper, add the half cooked egg noodles, the cooked potato, The Chicken meat, Thai Savoury Soya sauce, Tomato Sauce, Lemon juice and the Marinade liquid, and mix all together. Taste the season

    Let the soup boil, then turn down the heat, and simmer until noodles are just tender. Then turn the heat off. Remove and transfer into a serving bowl.

    Divide into individual serving bowls.Spread on top the fried Peanuts. Decorate on top with a sprig of parsley and half of lime. To serve with hot fluffy Jasmine Rice and regional Indonesian hot Sambal or Thai Sriracha Hot Chili sauce. 😚🍝🍅🌶🥜

As an ordinary housewife, I love doing home cooking & baking, or sperimenting world culinary but I'm a learner in the kitchen, so bear patience with me of my mistakes as all depend on time, availability, strength of health,moods & budget. I have to do the recipes that suites to me, to my husband, kid to my own family's preferences, so my cooking is just simple and not a restaurant style.🇮🇩 😚 I spent my childhood till teen age in Indonesia, a country that loves rice, spicy casserole with gravy, light soup bowls with sambals hot chili sauce on top. My mum cook almost daily 🐟🐋🐬fresh fish dishes, a menu that has plenty of vegetables on the table, we oftenly have snack many times a day. Delightful for us as kids to have🍍🍋🌽plenty of tropical fruits at home. In my birth city the sun shine 10 months yearly, the heavy raining season is 2-3 months approximately it depends in what zone location you are.😍My mom is passionately into cooking and I growing up got inspired and learnt from her cooking recipes, but I didnt learn much because I spent most of the time with the school programs.😍🌶Now I live with my husband in New Zealand. I couldn't find many of the ingredients from the Asian stores for my cooking, so I've tried to substitute the ingredients. The results are that the taste of my cooked dishes are not perfect to the original recipes. I've to reduce the quantity of the hot chilies as my husband or invited friends who can't eat hot meal at all but the main thing is that the dishes taste delicious & healthy.My quote: Keep on trying to improve my own cooking.
