Ingredients

4 persons
  • 5chicken legs with skin,with a sharp knife I made 2 slits+1slit
  • SPICY PASTE:
  • 2-3 stalkslemongrass (need plenty), pounded & knotted or
  • 1 tbslemon grass paste (see photo)
  • 3garlic cloves
  • 1small white onion, chopped
  • 1medium red onion, chopped
  • 1 inchginger, sliced thinly
  • 1 inchturmeric, sliced (or 2 tsp ground turmeric)
  • 3 pcfresh Red chili, deseeded, sliced
  • 1 tbsSriracha Chili sauce
  • 1 tbsRice Bran oil for to grind the herbs
  • 6Macadamia nuts
  • OTHER INGREDIENTS:
  • 6 pcKaffir lime or lemon leaves
  • 1tomatoes diced
  • 1 cupLemon basils/Thai basils
  • 1 1/2 cupswater
  • 1kaffir lime juice
  • 3/4 tbssoft brown Sugar,
  • 1 tspsalt & grounded black pepper
  • 1 tbsCornflour to thicken
  • 2large buttons mushrooms, chopped roughly
  • 1 cupRice Bran oil to fry the chickens
  • Hot steamed Jasmine Rice
  • TO GARNISH:
  • sprinkle on top with green onion, diced
  • and 5 Lemon Basils leaves

Steps

    In a food processor: put white & red onions, lemongrass, garlic, ginger, fresh tumeric or ground turmeric, Macadamia nuts, red chili, Siracha chili sauce & 1 tbs vege oil to loosen the texture and blend until the texture is a bit chunky, not smooth!!. Heat the wok, and 2 tbs Rice Bran oil then add the spicy paste from the blender, and sautee' them, then add kaffir lime leaves and lemongrass stalks (or paste) until cooked & fragrance.

    Add 1 1/2 cups Rice Bran oil and put the chicken in hot oil, mix and cook until chicken changed colour just a little brown on both sides but don't overcook. Add 1 1/2 cup water, 3/4 tbs sugar, tomatoes pieces, salt, pepper and the fresh mushrooms and mix well. Cook until the gravy is reduced and the chicken is almost done, then add in lemon basils leaves, lime juice and cornflour. Mix well. Taste the salt, then turn off the heat, transfer to a serving dish. Sprinkle on top with the green onions.

    Garnish on top Chicken with 5 Lemon Basils leaves. Serve with hot steamed Rice and with a cup of hot Jasmine Tea from Indonesia.😙🌶🍅🍜

As an ordinary housewife, I love doing home cooking & baking, or sperimenting world culinary but I'm a learner in the kitchen, so bear patience with me of my mistakes as all depend on time, availability, strength of health,moods & budget. I have to do the recipes that suites to me, to my husband, kid to my own family's preferences, so my cooking is just simple and not a restaurant style.🇮🇩 😚 I spent my childhood till teen age in Indonesia, a country that loves rice, spicy casserole with gravy, light soup bowls with sambals hot chili sauce on top. My mum cook almost daily 🐟🐋🐬fresh fish dishes, a menu that has plenty of vegetables on the table, we oftenly have snack many times a day. Delightful for us as kids to have🍍🍋🌽plenty of tropical fruits at home. In my birth city the sun shine 10 months yearly, the heavy raining season is 2-3 months approximately it depends in what zone location you are.😍My mom is passionately into cooking and I growing up got inspired and learnt from her cooking recipes, but I didnt learn much because I spent most of the time with the school programs.😍🌶Now I live with my husband in New Zealand. I couldn't find many of the ingredients from the Asian stores for my cooking, so I've tried to substitute the ingredients. The results are that the taste of my cooked dishes are not perfect to the original recipes. I've to reduce the quantity of the hot chilies as my husband or invited friends who can't eat hot meal at all but the main thing is that the dishes taste delicious & healthy.My quote: Keep on trying to improve my own cooking.
