Ingredients

  • For Dhuli Urad Dal
  • 1/2cup, Urad Dal wash and soak in water for 1-2 hours
  • 2Tomatoes medium, finely chopped
  • 2-3Garlic cloves, finely minced
  • 1/4 tspAsafoetida -
  • 1Ginger finely minced
  • 1/2 tspKasuri methi , crushed
  • 3Green chilis
  • 1/2 tspTurmeric powder
  • 1 tspRed chilli powder
  • 1/2 tspCoriander powder
  • pinchGaram masala powder large
  • to tastesalt
  • For Tadka
  • 1/2 tspcumin seeds
  • 1/2 tbspoil
  • :-For Lauki Raita
  • 2 cupDahi (Curd)
  • 1 cupLauki boiled and mashed
  • 1/2 teaspoonCumin powder (Jeera)
  • to tasteSalt,
  • to tasteRed chilli powder
  • Roasted cumin seeds for garnish

    In a pressure cooker, add the soaked and drained urad dal, 2 1/2 cups water, turmeric powder, half of the minced ginger, one slit green chilli and salt and pressure cook upto 2 whistles.

    Alternately, you can add the urad dal in an earthen pot and cook over stove top or wood heat. Add at least 4-5 cups water and bring to a boil. Reduce flame and slow cook till the dal turns soft yet hold shape.

    In a small pan, add ghee and oil. Once it turns hot, add cumin seeds and allow to splutter. Add the kasuri methi and finely minced garlic and saute for a few seconds. Add the remaining minced ginger and green chilies and mix.

    Add red chilli powder and mix. Add chopped tomatoes and saute for 6 mts.
    Immediately add this to the cooked dal and mix. Add garam masala powder and allow to simmer on low flame till the desired consistency is achieved. Adjust salt if required.

    Turn off flame and remove to a serving bowl. and serve with roti, pulka, paratha or rice.

    For Lauki Raita:-To begin making the Lauki Raita Recipe, get all the ingredients ready. In a large mixing bowl add all the ingredients.Stir all the ingredients well. Check the salt and spice levels and adjust to suit your taste.

    Transfer the Lauki Raita into a serving bowl and garnish some roasted cumin seeds and serve chilled and ENJOY!
