Dahi kanji is a typical , traditional and authentic recipe of Odisha . It is popular in village household. I found this like "kadhi", with miner change.

In this recipe sour curd with vegetables like bhindi , eggplant, raw banana and khada sag stem are used. Khada sag stem is thick and has sweet taste. So it goes well with kanji as it is sour. Kada sag is cultivated in summer. Kanji helps in digestions and keep the body cool in summer.

Ingredients

6 servings
  • 1 bowlchopped Vegetable
  • 1 cupdahi for kanji
  • 8small garlic cloves crushed
  • 2green chilli chopped
  • 10curry leaves
  • 1/3 tsphing (asafoetida)powder
  • 1/2 tsppanch phutan
  • 1/2 tsp coriander powder
  • 1/3 tspcumin powder
  • To tasteSalt
  • 1/2 tspsugar
  • 1 tbspmustard oil to cook

Steps

  1. 1

    Boil the veggies with water,salt and turmeric powder. Mix cumin and coriander powder with dahi kanji.

    Mix both boiled veggies and dahi kanji and cook on low flame.

    Heat oil in a tadka pan. Add and crackle panch phutan. Add hing ana saute on low flame. Than add curry leaves, chopped chilli and crushed garlic and cook till rawness of garlic is gone.

  3. 3

    Mix this tadka with kanji with veggies. Bring one boil and cover. Adjust salt and sugar.
    Serve with steamed rice.
