Steps

  1. 1

Choose a large tilapia, then scale and clean it thoroughly. Cut it into pieces, using only one piece for this recipe. Set aside.

  2. 2

Prepare the seasonings: fish sauce, coconut milk, palm sugar, red curry paste, cooking oil, red chili pepper, and kaffir lime leaves. Slice the red chili pepper thinly lengthwise and slice the kaffir lime leaves thinly. Set aside.

  3. 3

Heat a pan over medium heat and add a little cooking oil. Once the oil is hot, add the tilapia and fry until cooked. Remove and set aside.

  4. 4

Heat the pan again over medium heat and add cooking oil. Once the oil is hot, add the red curry paste and stir-fry until fragrant. Then add the coconut milk and stir until the oil separates and the mixture is well combined. Add the seasonings: palm sugar and fish sauce, and stir to combine.

  5. 5

Add the cooked tilapia and stir to mix well.

  6. 6

Add the sliced red chili pepper and kaffir lime leaves. Stir and simmer until the coconut milk and curry paste mixture reduces slightly. Serve when ready.
