Sort and rinse the lentils, then place them in a cooking pot with 8 cups of water. Cook until the lentils are about three-quarters done.

Rinse the bulgur well, then add it to the lentils. Add the salt and cook until the water is absorbed. Reduce the heat and let the bulgur cook through and the mixture dries out, making sure the grains don't stick together.

In a skillet, heat the olive oil and add the sliced onions. Cook until they turn golden brown. Pour the oil over the mujaddara and garnish with the onions.

Serve with cucumber yogurt, green salad, or sumac sauce (I'll share the recipe for the sauce soon). Don't forget the pickles! I love mujaddara with sumac sauce. Hope you enjoy it!

Tip: For perfect mujaddara, the grains should be separate and not mushy.
