Lauki aloo ki sabji (cooker cooked)

Lauki is very healthy and should be included in our regular diet. We make different recipes from lauki but plain lauki hardly anyone likes to have. So, I have made this version mixed with potatoes. Making this lauki sabzi does not take time and gets done quickly and goes well for a perfect dinner. I have learnt this from my mom. The recipe I have shared is not spicy. You can add more green chilies, red chilli powder and masala powder for a spicy taste.

Pour chopped laukis, potatoes, salt, turmeric powder and all spices with half cup water in a pressure cooker and wait for two whistles on low to medium heat.

Once pressure is released, open the lid. Now, heat a pan with oil add cumin seeds, mustard seeds, dry chilli and aesfoetida. And give a tadka to the cooked sabji. And mix well.

Simmer boil for two minutes. Serve hot with roti or Paratha garnished with coriander leaves.
