I love fish, today I want to cook something different. Inspired from my mum recipe, of a childhood memory I decided to cook this Fish Gulai or a Fish Curry with it's yellow gravy sauce, it's always delicious serve with hot n fluffy steamed Jasmine Rice. Ingredients

4 persons
  • 600 gfirmed Fish (white or red snapper), cut into big piece
  • FOR MARINATION:
  • 1/4 tspturmeric powder
  • 1lemon juice
  • 3/4 tspsalt
  • FOR MASALA PASTE:
  • 3garlic cloves, minced
  • 1 tspginger paste
  • 1/2 tspcumin powder
  • 2dried red chilies deseeded, diced coarsely
  • 1/2 tspcoriander powder
  • 1/2 tspturmeric powder
  • Other Ingredients:
  • 50 gFrench green beans, cut 3 cm long
  • 1big fresh tomato cut into segment
  • 1/2 tspCayenne Pepper (mild hot)
  • 1medium Onion, chopped finely
  • 1 tspKasuri Methi (dried Fenugreek leaves)
  • 15Curry leaves
  • 4 TbsTamarind paste
  • 1 cupcan Coconut cream milk
  • 1/2 tspsalt
  • 3 tbscoriander leaves chopped roughly
  • 3 tbsoil + 2 tbs oil for pan frying the fish pieces
  • Steamed Jasmine Rice
  • GARNISH: cucumber slices, fresh tomatoes slices,
  • SIDE DISH: Boiled in water 4 Sweet corns.Remove,coat with butter

Steps

    Clean, wash and pat dry the fish pieces, cut & slice into pieces. Add the lemon juice, salt on top. Add turmeric powder & cayenne pepper powder to the fish. Rub with the fingers impacting on both side. Cover, marinade fish for 10'.

    To prepare Masala paste: take a pan and dry roast the dried red chilies, cumin seeds & garlic on low heat for 1'. Set aside to cool. Add them to blender and coarse grind. Then add the turmeric powder, cayenne pepper powder, coriander powder, add 3-4 tbs water, and blend into a smooth paste. Thin consistency is good.

    To saucepan: heat 3 tbs oil and add the marinated fish and fry 2' on medium heat and flip the fish pieces on the other side. Continue to fry for another 2'. Take these out and place onto a kitchen towel paper to absorbed the oil then transfer them onto a large plate.

    In a saucepan heat 2 tbs oil, add the grated onion, fry on 7' on medium heat till light brown in colour then add the minced garlic. Now add the Masala paste made from the blender before and give a mix, add ginger paste, 1/2 tsp salt to it and continue to fry 3' on medium heat until water dries up and oil separate, make sure not to burn them. Add the fenugreek leaves and fry on low to medium heat for 1'.

    Now add 4 tbs tamarind juice, give a mix and then add 250ml water.Cook it on medium heat till it comes to a boil. Lower the heat and place the French green beans, tomato and cook for 7 minutes.

    Add the fried fish pieces, cover and cook for 5'. Open the lid, with a large spatula turn over the fish delicately. Add 1 cup Coconut cream milk, mix them delicately not to break, cover for 10', turn down the heat and let it simmer on low heat till oil separate. Lastly add 3 Tbs Coriander leaves and mix and continue simmering for another 1'-2'. Turn off heat.

    In a serving individual dish put the steamed hot rice in centre, sorrounding with sliced cucumber,sliced tomatoes and some herbs green leaves. On the side place a dish of Sweet corns (which are in season). Put the Fish Curry & it's gravy on top of the rice.😙😍

As an ordinary housewife, I love doing home cooking & baking, or sperimenting world culinary but I'm a learner in the kitchen, so bear patience with me of my mistakes as all depend on time, availability, strength of health,moods & budget. I have to do the recipes that suites to me, to my husband, kid to my own family's preferences, so my cooking is just simple and not a restaurant style.🇮🇩 😚 I spent my childhood till teen age in Indonesia, a country that loves rice, spicy casserole with gravy, light soup bowls with sambals hot chili sauce on top. My mum cook almost daily 🐟🐋🐬fresh fish dishes, a menu that has plenty of vegetables on the table, we oftenly have snack many times a day. Delightful for us as kids to have🍍🍋🌽plenty of tropical fruits at home. In my birth city the sun shine 10 months yearly, the heavy raining season is 2-3 months approximately it depends in what zone location you are.😍My mom is passionately into cooking and I growing up got inspired and learnt from her cooking recipes, but I didnt learn much because I spent most of the time with the school programs.😍🌶Now I live with my husband in New Zealand. I couldn't find many of the ingredients from the Asian stores for my cooking, so I've tried to substitute the ingredients. The results are that the taste of my cooked dishes are not perfect to the original recipes. I've to reduce the quantity of the hot chilies as my husband or invited friends who can't eat hot meal at all but the main thing is that the dishes taste delicious & healthy.My quote: Keep on trying to improve my own cooking.
