This is a great side dish for those Sunday bbqs or even a midweek main dish.
Steps

In an oven proof dish, the vegetables, garlic, green onions, salt & pepper and cayenne pepper till everything is well combined

In a heavy bottom pan over high medium heat, melt butter and add flour to the butter and stir and cook for 1-2 minutes. Reduce heat to medium

Gradually add the full cream milk while whisking continuously to avoid forming clumps in the mixture. Continue whisking until mixture begins to thicken.

Add in the evaporated milk and the cheese and stir to mix until sauce thickens (this will happen very quickly). You don’t want the sauce too thick otherwise it will not spread well over the vegetables

NOTE: If sauce becomes too thick, add a tbls of warm milk until you reach desired consistency

Immediately remove from heat and pour over vegetables. Make sure everything is well coated with the sauce

In a pre-heated oven, bake the cheese-bake under 180 degrees (Celsius) for 45-50 minutes

Remove from oven and allow to cool down before serving, but serve warm
