We have been trying to cut right back on carbs so this is the perfect meal without feeling hungry. The key is to get a really decent sized picece of meaty fish and plenty of veg to bulk it out. This meal was gorgeous and really simple, perfect for midweek.. Enjoy X

Pre heat oven to 180. Get all your veg ready, quickly par boil the Asparagus and then pop into cold water, do the same with the carrots,

In a pan fry your garlic and leek with a knob of butter.

Pop your leeks in a oven tray and put your fish on top and your veg next to it. Add 1/2 the sweet chilli and bake for about 18mins.

Plate up your fish and veg and then add the remaining sweet chilli and sprinkle with the fresh herbs, Enjoy x
