Ingredients

5 minutes
  1. 2 cupsfresh Italian basil leaves (about 50 grams)
  2. 2-3garlic cloves
  3. 1/4 cuppine nuts (about 35 grams)
  4. 2/3 cupolive oil (about 160 ml)
  5. 1/2 cupgrated Parmesan or Pecorino cheese (about 50 grams)
  6. Salt, freshly ground black pepper

  1. 1

    Lightly toast the pine nuts in a small skillet. Set aside to cool.

  2. 2

    Wash the fresh basil well and place it in a food processor or blender with the garlic and pine nuts. Pulse a few times, then add the olive oil, salt, and pepper. Continue blending until combined.

  3. 3

    Add the Parmesan cheese and blend until the mixture is smooth and uniform.

  4. 4

    Your sauce is ready! Serve over freshly cooked pasta of your choice.

    Tips: To freeze, place the pesto in an airtight jar and cover the surface with olive oil. It will keep for up to three months. It also keeps in the refrigerator for a few days.
