This recipe also works for Shami bread without bran.
Steps

In a bowl, combine the flour, yeast, sugar, baking powder, and salt. Mix well.

Add the warm water and start kneading until you get a soft dough.

Spread the dough on your countertop and knead it very well for about 10 minutes, or use a stand mixer if you have one.

Grease a bowl with oil, coat the dough with oil to prevent it from drying out, cover, and let it rise for 40 minutes until it doubles in size.

After rising, shape the dough into a log and cut it into balls. In a tray, mix some flour with bran, place the dough balls on it, cover, and let them rise for another 15 minutes until they puff up.

Sprinkle some of the flour and bran mixture on your countertop, then roll out each dough ball with a rolling pin to form a round flatbread.

Place the rolled-out bread on paper towels or plain white paper, cover, and let it rest for another 30 minutes.

Heat a sieve or skillet over medium heat until very hot.

Place the bread on the sieve or skillet. When it puffs up, flip it to the other side and cook until done.
