Ingredients

30 minutes
Serves 3 or 4 servings
  1. 1 cuprice (about 200 grams)
  2. 4hard-boiled eggs
  3. 5onions, sliced lengthwise
  4. 3green chilies, chopped
  5. 1/2 teaspoonginger paste
  6. 1 teaspoongarlic paste
  7. 5-6mint leaves
  8. 1/3 cupcilantro, finely chopped (about 10 grams)
  9. 1/2 teaspoonturmeric powder
  10. 1/2 teaspoonred chili powder
  11. 1/2 teaspoongaram masala
  12. 3 tablespoonsplain yogurt
  13. 5 tablespoonsoil
  14. 1 tablespoonghee
  15. 1 1/4 cupswater (about 300 ml)
  16. 3 tablespoonsbiryani masala
  17. Whole spices as needed: dried red chili, cloves, bay leaf, green cardamom, black cardamom, cinnamon

    First, poke the boiled eggs all over with a knife, then mix them with salt, turmeric, and chili powder. In a pressure cooker, heat oil and fry the onions until crispy. Remove and set aside. In the same oil, fry the eggs and set aside.

    Add a little more oil to the same pot if needed, then add the whole spices and sauté. Add the onions and tomatoes and cook until soft. Mix in the ginger and garlic paste. Add yogurt, then salt, turmeric, chili powder, garam masala, and biryani masala. Cover and cook for 2-3 minutes.

    Add green chilies, mint leaves, and cilantro. Add the soaked rice, then the fried eggs. Top with the fried onions. Pour in 1 1/4 cups water, then drizzle 1 tablespoon ghee on top. Cover with the lid and cook on high heat until you hear one whistle.

    Turn off the heat and let it rest for 10 minutes before opening. Check if the rice is cooked.

    Your Egg Biryani is ready. Serve hot with salad and yogurt. Enjoy!
