Ghee Mysore Pak

Dry roast besan for 5 minutes on low flame. Roast till you get a good aroma. Melt one cup ghee and add it to the roasted besan. Mix well.

Filter this besan ghee mixture in a stainer to remove any lumps present in the besan. In a large kadai add 1 and 1/2 cup sugar. Add water just enough for the sugar to dissolve that is upto the top level of sugar.

On medium flame dissolve the sugar. Boil the sugar syrup until it reaches one string consistency. Meantime add one cup ghee in another kadai and melt it.

Keeping the flame low add the besan ghee mixture to the sugar syrup. Stir well till the mixture is combined in the sugar syrup. Add 3 to 4 tbsp ghee which we melted in another Kadai to this besan and mix well. Mix until the ghee is absorbed.

Again add more ghee in batches and keep mixing. Repeat adding ghee and mix until the mixture starts to separate from the kadai. At this stage if you add more ghee it will not get absorbed.

Transfer this to a greased plate or tray. Level it and allow to cool for 30 to 40minutes. After Mysore Pak is set well, cut into desired size and shape.

Enjoy Ghee Mysore Pak which instantly melts as soon as you place it in your mouth. 😋
