Classic Thai Glass Noodle Salad (Yum Woon Sen)

Wash and slice the vegetables. Prepare all ingredients.

Boil the glass noodles and soak the shrimp in hot water.

Heat a pan over medium heat, add oil, and fry the chopped garlic until golden. Remove and set aside.

Leave a little garlic and oil in the pan. Add the ground pork and cook, then add the shrimp, 1 teaspoon fish sauce, and a splash of water. Stir-fry until the pork and shrimp are cooked through. Remove from heat and set aside.

Make the salad dressing by mixing fish sauce, palm sugar, and pickled garlic brine. Stir until the palm sugar dissolves.

Add the cooked pork and shrimp to the dressing and mix. Add the shallots, cilantro, fried garlic, and sliced chilies. Toss everything together and taste. Serve on a plate, topped with roasted peanuts. Enjoy!
