Combine bourbon, soy sauce, brown sugar, shallot, garlic, black pepper and bring it up to a boil

Butterfly the chicken, cut out the backbone and split the chicken into two halves

Cut slits 1/2" through the skin and into the chicken.

Marinate chicken for at least an hour

Skewer chicken half through the breast and thigh

Fire up grill

Put chicken on grill skin side up, dark meat facing the coals.

Baste chicken every 15 minutes

Cook chicken for 1 and a half hours and 160 degrees in the breast
