Basic Cheese Fondue

Ingredients

20 minutes
4 servings
  1. 1garlic clove, halved crosswise
  2. 11⁄2 cups dry white wine
  3. 1 tbspcornstarch
  4. 2 tbspkirsch
  5. 1/2 lbsEmmental cheese, coarsely grated
  6. 1/2 lbsGruyère, coarsely grated
  7. Grated nutmeg
  8. Italian or French bread cut into cubes. Stale is best

Cooking Instructions

    Rub inside of a 4-quart heavy pot with cut sides of garlic, then discard garlic.

    Add wine to pot and bring just to a simmer over moderate heat.

  3. 3

    Gradually add cheese to pot and cook, stirring constantly until cheese is just melted and creamy. Add cheese slowly until each addition is melted.

    Stir together cornstarch and kirsch in a cup and stir into cheese.

    Bring to a simmer and cook, stirring, until thickened, 5 to 8 minutes.

    Add nutmeg if desired and stir in.

  7. 7

    Transfer to fondue pot set over a low heat.

    Serve with cubed, slightly stale or dried out Italion Bread.

Retired at age 55 and enjoying the mountains. I'm now 72, married for 50 years. :) I love to cook but I don't care if ingredients are Organic nor GMO, Gluten-free, low calorie, or low Cholesterol! And Never use low/no-Fat as I enjoy good food. I never take procedural pictures as most cooks know how to boil water and stir sauces.
