I have tried Baby Aloo in Cashew-Milk based gravy which turned out to be superb.
Steps

Boil the potatoes and fry them.

Grind the tomatoes, soaked cashews and melon seeds together

In a pan add a drop of ghee and then add the tomato cashew mixture.

Let the paste release oil then add coriander, red chilli powder and turmeric according to taste.

Let the spices mix well then add malai

Then add milk.

Then add fried potatoes.

Then add fennel powder and garam masala.

Simmer it for 5-7 minutes.

Now add fresh malai again and turn off the flame.

Serve it with Naan, paratha and kulchas.

Garnish it with coriander leaves and Green Chillies.
